Shrimp and Broccoli
This recipe is simple and delicious! First, thaw and clean the shrimp. Then, chop the broccoli into small bite-sized pieces. Cut up some onion into wide slices, and in a measuring cup, stir together rice vinegar, soy sauce, and chili garlic sauce. In a large skillet, heat the sesame oil then add the broccoli and onion, stirring occasionally then add the shrimp. When the shrimp is just about opaque, add the sauce mixture. Sprinkle some sesame seeds on top and enjoy!
This one is for the seafood lovers! First, brine the salmon and in a shallow dish, stir together water and salt until it dissolves. Place the salmon in the water and wait for 15 minutes. Then, rub the bottom of a baking dish with olive oil and place dry salmon on the pan. Sprinkle the salmon with salt, pepper, and any other spices of your choosing. Cover the pan with foil and bake the salmon for 10 minutes. Then remove the foil and bake again. When the salmon is done, spoon the pesto over the salmon. Sprinkle it with chopped pine nuts and a bit of lemon zest. Serve with the carb and veggie of your choice!
Lemon Pepper Chicken
A new take on the classics is always a safe bet! First, mix together cornflour with soy sauce and lemon juice in a small bowl. Then, heat oil in a large frying pan and add the chicken, capsicum, carrot, and broccoli, and stir-fry. Then, pour the lemon and soy mixture into the pan, add chicken stock and spring onions and bring to a simmer. Sprinkle some grated lemon zest and serve with rice, then enjoy!
This is what you cook when cooking is the last thing you want to do! First, make some rice then set it aside. Then, place peanuts on a baking tray and roast until lightly golden then remove, cool and roughly chop. Then make a chili paste and heat some oil in a skillet. Crack one egg into a cup, then when the oil is hot, use the cup to pour the egg into the center. Cook until the outside starts to go golden but the yolk is still runny. Then, spoon rice onto dishes, top with eggs, peanuts, herbs, and chili sauce. Serve with bean sprouts, extra chili, and lime wedges, and enjoy!
Beef n’ Broccoli
A simple recipe with delicious results! First, cook up some egg noodles and set them aside. Then, heat oil in a large frying pan and add garlic, beef, and ginger, then cook, breaking up the beef with a wooden spoon, until the beef is browned. Add in rice wine and char sui sauce, then simmer. Add the broccolini and stir until warmed through. Then, divide the noodles among plates and top with the beef mixture. Garnish with peanuts, chili, and coriander, then serve and enjoy!
Eggplant Pizza Bites
This makes a great party appetizer or snack for the family! First, slice the eggplant into thick slices, brushing both sides with olive oil. Sprinkle the tops liberally with kosher salt and dried oregano. Then, place the eggplant on a baking sheet and bake until tender. Make the pizza sauce and after cooling, top the eggplant with a thin layer of the pizza sauce and basil, then sprinkle on mozzarella cheese and Parmesan cheese. Then, broil the eggplant until the cheese is melted and lightly browned and serve!
No-Bake Energy Balls
Easy to make and convenient to take! First, toast some oats until just browned around the edges. Then, in a small bowl, combine flaxseed and warm water and set aside to thicken for about 5 minutes. Then, in a food processor, combine almond butter, maple syrup, dates, coconut oil, vanilla, cinnamon and salt, then add in the flaxseed mixture and blend until smooth. Slowly add the walnuts, oats, coconut, and chocolate chips and pulse until combined. Roll the mixture into balls and chill until firm. Then try them out for you and your family to enjoy!
Black Bean Hummus
Now this is really an easy one! All you have to do is combine black beans, cilantro, lime juice, jalapeno pepper, sesame oil, garlic, cumin, paprika, and cayenne pepper in a food processor or blender and blend together until smooth, pick up some pita, open some pretzels, or chop up some veggies, and enjoy!
Sweet Potato Chips
Quick and simple! First, grease 2 baking sheets with cooking spray, then make a lengthwise cut partway through the middle of each sweet potato. Then, cut the potatoes into coins using a slicer attachment and arrange the pieces on the baking sheets. Spray them with cooking spray and season both sides with salt, pepper, onion powder, garlic powder, and paprika. Bake in the preheated oven or air fryer until the edges start to curl. Garnish again with some salt, serve, and enjoy!
Tomato Basil Mozzarella Toast
A great snack to try out on the weekends! First, slice a baguette in half, lengthwise. Slice up mozzarella and tomatoes into very thin slices. Layer the mozzarella slices along the bread, cut size up. Place on a baking tray and broil until mozzarella has begun to melt then remove from the oven and lay tomato slices on top. Put it back in the oven until tomatoes crispin then remove from oven and sprinkle with fresh chopped basil. Slice into small pieces and garnish very lightly with salt and pepper, then enjoy!
